It seems relativly random to me. Maybe you have to get her affection to you high. But even if you dont run into Ryan at the club you will be invited to their marriage where you get practicly the same option as in the bar. Difference is you must increase your affection definitly with her to show her what you found out.

So both ways work to get Sam.
